Egg Muffins

Easy, delicious and full of protein! Thank you to my neighbor Oxana for this recipe.
EGG MUFFINS
INGREDIENTS:
- 6-7 eggs 
- Half-and-half or heavy cream (about 1/3 of a small container) 
- Cheese (I used shredded reduced-fat cheddar, but you can use mozzarella, goat cheese or whatever kind of cheese you prefer!) 
- Cooked bacon (or Canadian bacon) 
- Salt & Pepper to taste 
- Optional: Scallions, onions, mushrooms, peppers, etc. (be creative!) 
Instructions:
- Preheat oven to 375 degrees F. 
- Spray muffin tin with non-stick spray (I butter-flavor Pam). 
- Whisk the eggs and half-and-half for about one minute. 
- Add salt & pepper to taste. 
- Using a 6-muffin tin, fill each about 3/4 of the way and add bacon, cheese, etc. 
- Add a little more egg to each muffin tin to cover bacon, cheese, etc. 
- Place muffin tin on a sheet pan and bake at 375 for approximately 20 minutes (don't overcook or the eggs will get dry). Note: They will deflate once removed from the oven, that's normal! Add salsa if you want more flavor! Enjoy!
