Walnut Balls

Yummy, melt-in-your-mouth walnut balls! These cookies are similar to snowball cookies, Mexican wedding cakes, etc. except I added egg, almond and vanilla extracts and gave it my own twist 30 years ago and they quickly became a family favorite. I personally love anything covered in powdered sugar but these are especially tasty because of the almond extract - it gives them an extra pop of flavor!
WALNUT BALLS
- 1 lb. Land 'O Lakes butter 
- 2 Eggs 
- 4 cups chopped walnuts 
- 4 cups flour 
- ½ cup plus 2 Tablespoons sugar 
- 4 teaspoons vanilla extract 
- 4 teaspoons almond extract 
- 2 tablespoons water 
- 1 teaspoon salt 
- 1 box confectioners’ sugar (to roll cookies in) 
Directions:
- Beat butter, eggs, sugar, salt, vanilla, almond extract and water until light & fluffy. Add nuts and flour one cup at a time. 
- By hand, roll and shape into 1-inch balls (I use a small cookie scoop). 
- Bake at 325 degrees F for approximately 15 minutes. 
- While still warm, carefully roll in confectioner’s sugar. 
- Let cool completely and repeat a second time.
