My friend Michelle made these Buttery Oatmeal Maple Craisin Cookies many years ago and I absolutely loved them! They’re crunchy on the outside, chewy on the inside, so buttery they melt in your mouth and I love the hint of maple flavor with the oatmeal and the rum-soaked craisins! OMG yum!
BUTTERY OATMEAL MAPLE CRAISIN COOKIES
2 sticks of butter
2 tablespoons maple syrup
2 tablespoons of water
1 cup sugar
1 cup flour
1/2 teaspoon baking soda
1 teaspoon baking powder
2-1/2 cups quick cooking oats
1 cup raisins (or Craisins) soaked in 2 tablespoons of orange juice or rum
Directions:
- Preheat oven to 350 degrees F.
- In a saucepan combine butter, maple syrup and water.
- Cook slowly until butter melts; remove from heat.
- Mix dry ingredients together.
- Add melted butter mixture to dry ingredients. Add raisins.
- Drop by teaspoon onto an ungreased baking sheet (or you can use parchment paper).
Bake for approximately 10 minutes.
