Ginger Snap Cookies

I love making these cookies in the fall but they're great any time of year! The house smells amazing when I make them and it always reminds me of a crisp fall night gathered around a bonfire with family and friends.
GINGER SNAP COOKIES
- ¾ cup butter 
- 1/2 cup brown sugar 
- 1/2 cup white sugar 
- 1 egg 
- ¼ cup molasses 
- 1 tablespoon ground ginger 
- 2 teaspoons baking soda 
- 1 teaspoon cinnamon 
- 2 cups flour 
- ½ teaspoon salt 
Directions:
- Preheat oven to 350 degrees F. 
- Cream butter and sugar. Beat in egg and molasses. 
- Mix dry ingredients together and add to creamed mixture. Form into teaspoon-sized balls by hand or with a cookie scoop and roll in granulated sugar to coat lightly. 
- Bake about 1 ½ inches apart for 10-12 minutes. 
- Yield: 75 cookies
